Nose-to-Tail Wine Dinner — Thursday 21st May
A six-course nose-to-tail dinner, paired wine for wine by Caballo Loco of Chilean producer Valdivieso. Every dish is made from scratch in our kitchen, moving through the whole animal with precision and intent. Arrival 7:30pm, dinner at 8:00pm. £90 per person, including a welcome drink. Course 1 Lardo & gnocchi fritti — wafer thin cured pork fat with warm fried dough balls
Course 2 Brawn, chicory & sauce gribiche — pig’s head terrine with bitter leaves
Course 3 Hand rolled tagliatelle, pancetta & cheek ragu — home made pasta with rich pork cheek ragu
Course 4 Loin, wild garlic, celeriac & apple — slow cooked loin of pork, celeriac purée & pickled apple
Course 5 Smoked ham hock, rhubarb & radish salad — house cured and smoked pork shank with raw rhubarb & Cockenach radishes
Course 6 Sanguinaccio dolce — an Italian classic; rich chocolate and pig’s blood pudding with candied fruits and nuts
